Using house-made Canadian bacon, The Farmer's Table assembles
its Classic, on an English muffin
with hollandaise sauce.
The current Caprese salad craze
is reflected in a Benedict that features goat cheese, sliced tomato,
hollandaise, and basil pesto. The
Bay Side Benedict is an amalgam of English muffin, sautéed
shrimp, fresh jalapeños, apple
wood smoked bacon, hollandaise,
and guacamole. The Florentine relies on local spinach, north Georgia mushrooms, and hollandaise.
Again, a buttermilk biscuit takes
the place of the usual English muffin.
For the Porky, hollandaise is replaced by mountain-style sausage
gravy, along with regional ham
and bacon. And we selected the
Southern Benedict, a tower of buttermilk biscuit, fried green tomato,
crab cakes that acknowledge South
Carolina's seacoast, and a buttery,
herby béarnaise sauce.
More local buttermilk is used in
the creation of Redneck Pancakes,
loaded with home fries, smoked
bacon, and scrambled cheese eggs.
The Farmer's Table purchases all
of its breads from local bakeries.
The Apple Crumb French Toast is
built on apple pie swirl bread, with
caramelized apples, granola, and
caramel sauce.
Covering an entire wall in this
bright, inviting restaurant is a
mural depicting the bounty of
the farm-carrots, eggplant, corn,
tomatoes, pumpkins, and cantaloupe, painted in four days by a
Spartanburg artist who goes by the
name Bailie.
Deepening their farm-to-table
commitment, the Sansburys recently started The Farmer's Table
On the Go, a first-of-its-kind food
truck that brings menu items made
from locally sourced ingredients to
customers' doorsteps.

American Grocery Restaurant in
nearby Greenville, South Carolina,
had us at braised beef tongue. Chef
and restaurant co-owner Joe Clarke
learned lessons in his grandmother's
hillside garden in Inman, South Carolina, that would stay with him for
life. He would learn to make use of
every part of the plant, every part of
the animal. We can't recall another
restaurant that offers beef tongue, a
delicacy from our childhood.
In addition to serving a confit of
rabbit using animals from nearby
Dean's Rabbits in Fountain Inn,
South Carolina, Joe Clarke offers up
rabbit liver mousse on his appetizer
menu.
Joe and his wife Darlene have
deep roots in South Carolina. Joe
grew up in Spartanburg and met
Darlene, a native of Greenwood, at
the University of South Carolina
in Columbia, where she earned a
bachelor of arts degree in theatre.
She also holds a master of fine arts
in theatre from Southern Methodist
University.
The Clarkes would eventually
join what has been called the culinary renaissance in Greenville,
South Carolina, as the former decaying mill town evolved into a diner's
destination.
But before that, their careers kept
them a long way from the Palmetto
State. They spent years working in
and around the film industry in Los
Angeles and New York. It was in the
Big Apple where their careers took
a radical turn. While Joe was completing his degree at the French Culinary Institute, Darlene worked as a
server in several Manhattan restaurants, learning the ins and outs of
front-of-the-house operations.
In 2007, they returned to their
home state of South Carolina to
open American Grocery Restaurant, which they refer to as AGR,
noting that the three letters also
