Pan Cakes: Bake pancakes for a large
crowd in a well-greased 15x10x1"
jellyroll pan. Bake in a hot oven (425°)
for 15-20 minutes; cut into squares
and serve.
Egg Muffin Cups: Spray a muffin
tin with non-stick spray and place
crumbled bacon and shredded cheese
in the bottom. Beat 12 eggs and pour
over ingredients in cups to ¼ inch
from top. Bake 20 minutes at 350°.
Remove from oven, cool slightly, run a
knife around the edges and pop out.
