For a vegetarian
chef, Parkhurst
really knows how
to properly cook
and season
meat...
Dishes run the gamut from Southern Fried Tofu to a crispy
bacon BLT.

Finished Sirloin Panini or classic BLT. Both are classics, with the BLT mounded with crispy Niman Ranch
bacon, local Floyd lettuces and either summer garden
tomatoes or the juicy hydroponic ones from Yoder's
Farm. Equally tantalizing, the Sirloin Panini features
local beef, grilled onions, horseradish, mozzarella and
sautéed mushrooms. Hearty and well-balanced with
the horseradish's bright tang against the silky mozzarella and caramelized onions, the sandwich is one
of my favorites.
Dinner offers even more options, ranging from
vegetarian to the not-so-much. On the one hand,
the very vegetarian Southern Fried Tofu with greens
and smoked cheddar grits offers up a hearty, Southern-tinged entrée that's sure to please anyone with
a hankering for a meat-free meal. On the other,
there's something magical in Parkhurst's meatloaf
that makes me come back for more. For a vegetarian
chef, Parkhurst really knows how to properly cook
and season meat, and the meatloaf 's mix of pastured
Virginia lamb and spices is one to rival your mother's.
Given the focus on seasonally available ingredients, however, one of the best ways to experience
Parkhurst's cooking is through ordering a daily special. For brunch, be sure to try his quiche. The eggs,
always locally sourced, yield dishes that are both rich
and light - a perfect balance for whatever local vegetables are in season. The one I tried featured Fergusson
Farm's kale and potatoes with a side salad of arugula,
grapes, and olives, a perfect way to start a Sunday.
Lunch and dinner specials vary, but on one quick
lunch visit I enjoyed a crab-cake sandwich with crab
from Local Seafood Delivery bound with just enough
breadcrumbs to hold the sweet crabmeat together.
Where most crab cakes err on the side of bready, this
one emphasized the crab, a real treat this far inland.
