Three Ways
with Tomatoes

MAKE A QUICK SAUCE

Over medium heat, add a few
tablespoons of olive oil to a large skillet.
Add about 2 cups of roughly chopped
fresh tomatoes and cook until they break
up and juices begin to thicken, about
10 to 12 minutes. Serve over pasta or on
toasted baguette slices.

SKEWER THEM

For a pretty presentation that can
work for school lunches or grown-up
parties, create skewers of watermelon
cubes and cherry tomatoes. Depending
on your crowd, you might also add
mozzarella balls, basil leaves and
a drizzle of balsamic vinegar.

GRILL THEM

Halve tomatoes along their midlines (rather than stem to stem), sprinkle
them with salt and drizzle with olive oil.
Preheat a grill to medium-high heat; allow
tomatoes to sit in the salt mixture while
it's warming up. Place tomatoes cut side
down and grill for about 3 minutes.
Flip with tongs and finish cooking for
an additional 3 to 5 minutes.

The tomato has staying power. Food historians
believe its wild ancestor was cultivated by the
Aztec people as early as 700 A.D. Thousands
of dishes worldwide list tomatoes as a main ingredient,
The Oxford Companion to Food estimates.
Tomatoes provide plenty of nutrients, some of which
might help protect our health. One of these is vitamin C: A single cup of raw cherry tomatoes provides
more than a third of the recommended daily allowance
for adults. " Vitamin C helps with the body's tissue
growth and repair and also improves our ability to
absorb iron, " says Rahaf Al Bochi, a registered dietitian
nutritionist and a spokeswoman for the Academy of
Nutrition and Dietetics.
Vitamin C also helps guard against health issues
caused by free radicals, found in pollution and cigarette
smoke, Al Bochi says. " Antioxidants such as vitamin C
can prevent and repair this damage and reduce the risk
of chronic diseases, " she says.
Another lesser-known compound in tomatoes is
lycopene. " This is what gives tomatoes that gorgeous
red color, and some studies show that it may lower
the risk for heart disease and certain types of cancer, "
Al Bochi says. Processed foods such as jarred marinara
sauce have a higher concentration of lycopene than raw
tomatoes, she notes, as heating or puréeing raises the
levels. When shopping for canned tomatoes, she says,
" if you're monitoring your salt intake, be sure to choose
low-sodium varieties. "
