dispatch All the Buzz OUR CURRENT INSPIRATIONS IN THE WORLD OF WEDDINGS, FROM THE RITZ-CARLTON AND BEYOND Trick of the Trade Designer Mark Zunino dressed celebrities for 25 years before turning his talents to wedding gowns. "When a bride walks down the aisle - that's her red-carpet moment," he says. "I know how to make a woman look great from every angle." For A-list style, look for clues to superior construction, including internal zippers (which secure details like corsets and boning), support mesh and smart draping. If a dress's interior is as well-crafted as its exterior, you might be looking at The One! Ace Your Cake There's more than one way to bake a cake - and even more options for decorating one. Pastry Chef Richard Capizzi, who created a cake collection for Patina Restaurant Group, explains the most popular: Filigree refers to the delicate, swooping curls and floral accents that add a romantic element. Stencils are used to apply complicated designs to cakes. Fondant icing is made mostly of sugar and gelatin and creates a perfectly smooth, almost polished finish. Gum paste is made with egg whites and is usually harder than fondant, so it's better for cake décor such as handmade flowers. Buttercream is the most classic of frostings. It's the creamy cover you see on more traditional cakes, but nowadays, creative pastry chefs are making it feel new again. 32 W E D D I N G S B Y T H E R I T Z - C A R LT O N 3 Steps to the Perfect DJ Now that you've found the gown you always dreamed of, make sure your DJ is also just your style. Jenn Bedell, the weddings manager at Scratch Music Group, offers three ways to ensure your event sounds as good as it looks. 1. Ask the right questions. Instead of the common "What type of music do you play?", Bedell suggests rephrasing the question as "What type of music can you play?" A couple should not conform to a DJ's style, but instead find one who will build the ideal playlist for them. 2. Don't just focus on budget. "Surveys find that, in hindsight, nearly all brides would have made entertainment more of a priority," Bedell says. So while budget is important, compare more than just the numbers. Check for experience and references, and ask hard questions when a quote seems high. 3. Narrow tastes don't always mean a narrow search. Whether you're a fan of bluegrass or EDM, you don't have to hire a DJ who only spins your favorites. An excellent company can work to fit your taste and guarantee good service.
