Sweet Legacy
Floss Barber Inc. transforms a former Pennsylvania chocolate factory

U

ntil it shuttered in 2016 the Wilbur Chocolate Factory,
more than a century old, was-like the nearby Julius
Sturgis Pretzel Bakery-an institution in the small, colorful
Pennsylvania Dutch Country town of Lititz. When tasked with
converting the one-time cocoa hub into the 74-room Wilbur Lititz,
a Hilton Tapestry Collection Hotel, Philadelphia-based Floss Barber
Inc., smitten with that sweet slice of history, knew where to begin.
Elements from the factory's bygone days remain in place,
including the arched windows and copious exposed brick. Wood
flooring, some of it salvaged, is laid out diagonally as it was originally
and each of the preserved timber columns and beams were sanded

and refinished to showcase the grain details, says designer Anne
Marchessault.
A prominent coffee table, crafted out of a metal gear plucked
directly from the one-time factory, now graces the library lounge,
and vintage photographs, advertisements, and culinary artifacts
enliven walls and shelves. Turned wood tables and factory-replica
barn doors in the guestrooms are among the ways that Floss
Barber conjured "a warm, textured feel" to balance some of the raw
components, points out Marchessault.
Yet confectionery roots are only one compelling aspect of Lititz
lore, she says, noting that it was equally important for
the design narrative to explore "the spirit of the local
community." For example, when the team discovered
that Lititz was founded in the mid-18th century by
Saxony native Count Nikolaus Ludwig von Zinzendorf,
leader of the Moravian Church, it sparked sociocultural inspiration.
"We started with the Moravian and Bohemian
heritage of the church settlers and found beautiful
floral stencilwork to be part of their home decorations,"
explains Marchessault, adding that regional painter Tom
Henman dreamed up the stencil designs behind the
reception desk as well as the hotel's antique mirroring.
"Then, we looked at the origin of the Moravian star seen
on front porches and churches throughout Lititz."
The star, a symbol of Lititz pride that first popped up
as part of a German school's geometry lessons, manifests
in the Wilbur as a repeating pattern on both a laser-cut
metal screen and the front desk. Floss Barber, CEO of her
eponymous studio, says that the double-height lobby,
with the vertical, illuminated hotel sign, "draws guests'
eyes up to the overscale Moravian star chandeliers,
which are also hanging on the main street of Lititz."
At the entry, two disparate tile patterns, one a
geometric graphic print that references the star's angular
nature, the other more organic and reminiscent of the
soft florals, meld, says Marchessault, to tell "the story of
the town as soon as a guest walks into the space."
