WORTH WATCHING / CONCEPT2WATCH Rapido Italiano here’s a reason Go Roma was the recipient of Nation’s Restaurant News’ 2007 “Hot Concepts Award.” Its founders (Dave Wolfgram, Russell Bry, Yorgo Koutsogiorgas and Jeff Drake) have employed an innovative kitchen design that allows customers to be served a full meal — prepared with fresh, high-quality ingredients and cooked to order — in five minutes or less. The time-saving secret? Induction ranges, which allow Go Roma “to get the pasta cooked much closer to the station and allows us to compress the kitchen,” Drake says. Customers order from menu boards and pay for their meal, then take a number and choose a seat; the food is brought to them at their table. The menu includes six starters, three soups, six salads, eight thin-crust pizzas, five sandwiches, eight pastas, five Italian specialty dishes and three desserts; everything on the menu is $10 or less. Go Roma uses wood finishes, floating ceilings, custom light fixtures, branded lithographs and a warm palette of light reds, greens and yellows to create a casual, contemporary dining area. A division of San Francisco-based Forklift Brands (which also owns the Boudin Bakery and Austin’s Park chains), Go Roma has nine locations in Illinois and California. Plans include adding one or two companyowned locations per year, as well as franchising units.
