Hotel The Rise of roasted Carolina Quail at Timberlake’s ResTauRanTs Timberlake’s TasTes Legendary art and good food combine at chetoLa resort. ★ Timberlake’s restaurant at Chetola resort North Main Street Blowing rock, NC 800.243.8652 or 828.295.5505 and 70 april 2013 Internationally known artist and designer Bob Timberlake has found a new canvas — his selfnamed restaurant at Chetola Resort in the Blue Ridge Mountains of North Carolina. “When you think of Bob Timberlake, you think of home and comfort, and this menu exemplifies that,” says restaurant manager Clarence Stroud. Case in point: The warm corn bread and homemade apple butter that melts this Carolina girl’s heart. “Can I buy this in the gift shop?” I ask. “Maybe one day,” Timberlake replies. “I’m always pushing them and saying, ‘Let’s do this and let’s do that!’ ” His close involvement is evident when we sit down for dinner; he immediately notices a miniature canoe missing from the wall. To say the place showcases his paintings and furniture is an understatement: His artistry is everywhere, from the rich woven rugs on the floors to the iron chandeliers overhead. Timberlake even sat down with the chefs and planned the menu to include his favorites: tempura fried oysters and fresh North Carolina trout grilled with lemon-basil oil. More eclectic fare includes bison rib eye steak, and ostrich and wild mushroom roulade. “We try to keep it as local as we can,” Stroud says. “We get to know the farmers and meet with them. It costs more, but it’s worth it. We look for something healthy.” The menu notes wellness-minded dishes that
