By Charu Suri ★ "There's Always Room for Jell-O," read the slogan for America's most famous dessert. That was in 1964. Today, the adage still applies - among mixologists at least. Eating a cocktail with a spoon seems counterintuitive, but bartenders across the globe are creating edible cocktails with ingredients from gelatin to agar agar and creating light-as-flan concoctions that are decidedly not college vodka shots. Shelley Walker, sommelier at Union Station Wine & Dine Taste, Savor, Enjoy Hotel in Nashville, was recently asked to re-create cocktails from the '90s, which took her back to her college days. She started playing with pre-Prohibition recipes and created two seasonal gelatin shots, including a Popcorn Old Fashioned made with blackberry and lemongrass-infused white whiskey, a classic Harvey Wallbanger, and a gelatinous version of a French 75. A typical Old Fashioned uses maraschino cherries and orange, but Walker created a different, fruity-meets-tart version noting that "blackberries go very well with bourbon." The lemongrass is a nod to the more traditional use of Angostura bitters.
