Conversation, food, and, of course, beer are the staples of these outdoor, warmweather gatherings that are essential to German culture. In the U.S., tavern and restaurant owners are adding a few new spins to the traditional idea, such as distinctive cuisine from famous chefs, impressive settings, choice craft beer, and group games. The real appeal however, is that original German spirit — communal seating, good food, lively crowds, and those crisp, thirst-quenching beers. Radegast Hall Brooklyn Two old warehouses combine to create the perfect lived-in setting for this cool-but-friendly German beer hall. One side is dark and cozy, the other side — thanks to a retractable roof — is light and airy. Both are fantastic for all-day imbibing. The food is thoughtful and well prepared; try the snappy grilled sausages or a lighter brunch omelet with zucchini and goat cheese. The German-focused tap list comes served in pints, liters, or pitchers, and beer enthusiasts will go nuts over the more unusual bottle selection like a weizenbock from Schneider Aventinus. On the Waterfront Cafe Venice Beach, California With the Pacific Ocean to the left, the Santa Monica Mountains ahead, and sand underfoot, the fact that the aptly named cafe serves steins of cool German beer is almost beside the point. Park your beach cruiser at the boardwalk bike rack and find a table in the side beer garden. Oversize German pretzels lay down the perfect foundation for the pilsners, dunkels, and weizenbiers from centuryold breweries like Erdinger and Bitburger.
