Chef Matthew King is about to share the secret behind the melt-in-your-mouth steaks at Smith & Wollensky (S&W), one of the nation’s most revered steakhouses since it opened in 1977. How did he become the national director of culinary development and corporate chef? King started washing dishes at age 14 at a catering company in his hometown of Shrewsbury, MA. After graduating from the Culinary Institute of America in 1996, he worked in many fine establishments including Essex House in New York, where he cooked for presidents George H. W. Bush and Bill Clinton. After stints at Starwood Hotels and opening his own steakhouse in Ireland, King returned to the States in 2010 to lead Boston-based Smith & Wollensky Restaurant Group and its nine locations.
