Though organic and
sustainable foods are
filling the shelves of
grocery markets, it's a
relatively new horizon
for restaurateurs.
Pizzerias in San Diego
and Canton, Ohio,
are proving pizzeria
menus can go green.
For these operators, it's
more than a mission
statement -- it's a
way of life.

A fresh Caprese salad
at the height of summer is magnificent in
its simplicity. These
ingredients are the
perfect trio for menu
enhancement and
guest satisfaction in
any restaurant.

I'd never been to
Connecticut before,
and I was shocked at
the number of Italian
restaurants per capita.
While both the places
we visited had vastly
different concepts,
both do quite well
in their respective
hamlets.

On one hand, independent
pizzeria operators want
their restaurants to be a
lively, fun destination for
a wide range of diners.
But on the other hand, a
combination of too many
constant sounds at higher
volumes is not acceptable
for many diners. Thankfully,
operators have a range of
tools - from sound buffers
to standard operating
procedures - that can
help them put the clamp on
excessive noise.
