Middleby Marshall rolls out
a new WOW!2 Oven
Middleby Marshall is expanding the WOW!2
Series conveyor ovens with the addition of
the new PS638G. The PS638G WOW!2 ovens
use the Middleby Marshall premier VAF
impingement technology allowing users full
control of the air flow in the baking chamber.
Precisely designed air fingers in combination
with a low temperature cook delivers a top
quality bake up to 40 percent faster than
traditional ovens. An optional hearth bake
belt makes the conversion from a deck oven
seamless. The PS638G is also designed
to cook endless amounts of chicken,
sandwiches, and more. Operators will be
able to increase production without giving
up more space or quality with the PS638G,
as it boasts a 2'' longer bake chamber and
1'' wider belt than the PS636. The oven has
the ability to be stacked three high to meet
the highest demands. The PS638G can be
cleaned with little effort thanks to removable

Globe cooking line
expands again
Globe Food Equipment Company recently
expanded their lineup of electric sandwich
grills. The mid-size combo unit comes with
cast iron grooved top and smooth bottom
plates. The grooved top provides popular

Artigiano cheese wins
"Best in Class" at ACS
Expert judges at the 2017 American Cheese
Society Contest awarded La Bottega di
BelGioioso Artigiano cheese with two
prestigious awards at a blind judging in
Denver, Colorado last month. Artigiano
received both 1st Place and 3rd Place
ribbons in the Flavored Cheeses category,
while BelGioioso Crema di MascarponeTM
took home a 1st Place "Best in Class" in the
Mascarpone category. Touted as the yearly
"Cheese Oscars", the contest drew a record
number of 2,024 entries, with the highly
coveted awards handed out to a packed room
of artisan Cheesemakers. Artigiano is a new
cheese from BelGioioso, marketed under the
La Bottega di BelGioioso brand. The wheels
are carefully aged under the supervision
of BelGioioso's Master Cheesemakers to
develop their deep nutty flavor and delicate
crystalline texture. The cheeses are then
soaked in an aged balsamic and cipolline
onion marinade or hearty red wine blend to

Hobart adds automatic
model to its EDGE Series
Slicer Line
Hobart has added the EDGE 13A automatic
slicer to its line of medium-duty EDGE Series
Slicers. The EDGE 13A automatic slicer is an
ideal option to address the slicing needs of
smaller operations, including independent
restaurants and delis. It features a 1-speed,
½ H.P. knife drive motor to ensure durability
and performance, along with a poly V-belt
drive system - a design that extends belt
life while producing optimal slicing results
and quieter operation. This system also
offers cost savings for maintenance and
repair by reducing parts and service time.
The addition of a full 45-degree gravity feed
requires less mechanical pressure during
operation. To ensure proper sanitation and
provide labor savings for cleaning, the EDGE
13A automatic slicer features a one-piece
anodized aluminum base - there are no
cracks, crevices or bolt holes for product
to lodge or bacteria to enter. An anodized
aluminum carriage and knife cover are
corrosion and impact resistant, and further
support maximum sanitation with minimal
cleanup time. A gauge plate interlock also
simplifies cleaning and protects users from
the knife during the process; it must be
closed to disengage the removable carriage
for cleaning and cannot be opened when the
carriage is removed. The EDGE 13A automatic
slicer joins the EDGE 13 manual slicer Hobart
added to the company's offering in February
2017. The EDGE 13 is a slicer designed for
deli and restaurant operations that require
less than four hours of slicing per day, and
incorporates many of the features that
make Hobart heavy-duty slicers an industry
