Forghedaboudit
Carbonara

6 jumbo deveined shrimp
Salt and pepper, to taste
1 cup cooked fettuccine

1 large egg
1½ tablespoons ricotta
cheese
2 ounces baby peas, frozen
1 ounce chopped scallions
Pinch parsley
Add tablespoon butter
2 ounces bacon fat
1 ounce chopped, precooked applewood
bacon
1 tablespoon fresh chopped
garlic
1 teaspoon virgin olive oil

Chicken Tequila Pasta

Pizza, in San Clemente, California
6 ounces spinach fettuccini,
cooked
5 ounces marinated chicken,
small dice
1 ounce bell peppers cubed
1 ounce red onion, julienned
3 ounces tequila
1 ounce butter
1 ounce soy sauce
5 ounces manufacturing cream
1 teaspoon fresh garlic
1 tablespoon fresh cilantro
2 teaspoons canned jalapeño,
diced
½ lime

In pan on medium heat,
add butter, bacon fat,
chopped pre-cooked applewood bacon, garlic, olive
oil, and shrimp. Stir until
shrimp is pink and no longer
raw.
Add the egg, ricotta, peas,
chopped scallions, parsley
and garlic. Cook until garlic
is lightly browned do not
overcook. Add more hot
water to make slightly saucy.
Add cup of precooked fettuccine to ingredients bowl.
Plate and serve.

Heat the butter in a pan and
add the chicken, bell peppers
and onion.
Cook until the chicken is soft,
then add the soy sauce, garlic,
jalapeño, lime and tequila.
Flame the mixture then add the
cream and allow to simmer.
Place the pasta in the pasta
cooker for approximately 1 minute to reheat.
When the pasta is done, place
it in a large pasta bowl, cover
with the sauce and garnish with
fresh cilantro.

Fusilli Primavera
Yield: Four servings
1 pound asparagus, trimmed and cut
into 1-inch pieces
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
2 cups mushrooms, drained
2 medium carrots, sliced
1 large zucchini, chopped
½ cup fresh basil, chopped

3/4 tablespoon salt
½ tablespoon pepper
2 tablespoons all-purpose flour
14 ounces evaporated milk
12 ounces fusilli
1/ cup Parmesan cheese, grated

Sauté onion, garlic and mushrooms in
the olive oil over medium-high heat for 5
minutes. Stir in carrots, zucchini, asparagus, 2 tablespoons basil, 2 tablespoons
water, salt and pepper. Cover and cook

over medium heat for 5 minutes.
Uncover and cook 2 minutes to evaporate
excess liquid. Remove from heat and stir
in flour for 1 minute. Add milk and put
back on heat. Stir until thickened, about
5 minutes.
Meanwhile, in large pot of boiling
water, cook fusilli until al dente. Drain and
toss and with sauce. Sprinkle with Parmesan and remaining basil, then toss again.
Divide into heated bowls and serve.
