Growing up in famed Upper West Side Mama's, Frank Tuttolomondo
ventured out to open his own pizzeria, Mama's TOO! in December 2017.

THE PIZZA DEFINITELY MADE THIS
SHOP A DESTINATION. The approach we
take to pizza for both our round and square
slices are very unique. When I opened
Mama's TOO!, I was chasing the perfect
pizza that I like to eat. I took characteristics
of many different styles of pizza and
incorporated them into both my round and
square pies. For example, I love the robust
flavors you get in a Neapolitan pizza like a
great quality plum tomato sauce, two-year
aged Parmigiano Reggiano, first-press
EVOO, fresh basil and maintaining the
integrity of those ingredients by cooking
at a high temperature and giving a nice
airy cornicione and crust throughout-

but skipping the fork and knife and
incorporating those ingredients with the
eat-ability of a New York slice, which
is now our House Slice - my idea of a
perfect slice. The squares were equally
inspired by many styles: a light, airy and
open crumb that the Roman al taglio
pizza is known for, a crisp olive oil-lined
bottom that gets fried in the pan like a
New York Sicilian has, artisanal toppings
hand crafted in house and of course the
caramelized cheese crust we finish it all of
with like a Detroit-Style square is known
for.
I THINK MAMA'S TOO! IS SO
DIFFERENT FROM MAMA'S PIZZA IN

SO MANY WAYS. The pizza is totally
different for one. Also our operation to
make our pizza is totally different. We
have very specific processes to make our
pizza whether its dough management,
all the way to proofing before we bake.
Mama's TOO! has my identity everywhere,
execution is very specific and unique from
a lot of pizzerias around the world. Mama's
Pizza is a locally respected neighborhood
slice joint with a lot of history and loyal
customers for generations that have been
eating this same pizza for years (way
before I was born) as well as served from
the same longtime staff we've retained
since I started in the business 15 years
ago. Mama's TOO! incorporates a lot of
contemporary flavors and emphasis on
marrying them with textures. I also think
we've done a great job pairing wines with
our pizza and providing a unique in-store
experience in a slice shop for guests
where they can enjoy with friends and
family. Also, we curate a cool playlist that
puts out a great vibe and kind of brings
it all together with the pizza to make it a
cool place to hang out. I think our digital
presence, especially on social media, keeps
customers and followers engaged and
informed about what we're doing.
PIZZA HAS BEEN MADE GREAT
BY A LOT OF PIZZERIAS FOR MANY
YEARS, but I think our approach to pizza is
something that a lot of the newer pizzerias
opening up are starting to pay attention to.
I think we also do a good job of doing one
thing when it comes to food and doing it the
best we can. We focus on pizza and do not
overwhelm ourselves with several different
menu items. I think between the exposure
we get and the culinary achievements we've
received, like the New York Times review
and cooking in the James Beard House,
the food world is continuing to recognize
that pizza can be and is so much more than
what they usually have/had and can have
experiences like one might have at some of
the best sit-down restaurants.
