an active, over 120-year-old sourdough
starter. It is so unique it was featured in
a short documentary film "the Quest for
Sourdough" while being gathered for the
Puratos Sourdough Library. A small piece
of it was collected as #104 in the library in
Belgium. Our sourdough is one of the oldest
documented sourdoughs in the world and
oldest in a pizzeria in the world!
This unique sourdough gives our pizza
a flavor profile that cannot be reproduced
by anyone else in the world! Puratos and
the Quest for Sourdough did several tests
on our sourdough showing six different
lactobactelli and three different yeasts.
Most sourdough starters have one, maybe
two Lactobactelli and one yeast, so our
Sourdough starter is truly one in a million!
To me it's like a sibling, I've been baking
with this starter my whole life!

WE HAVE TWO CONCEPTS. The original
that I grew up with is That's A Some Pizza, a
hybrid sourdough/New York-style pizzeria serving
fresh slices for pickup and whole pies for pickup
and delivery. The second is Sourdough Willy's
Pizzeria, which is a Roman Slice House also
serving Detroit, Sicilian, Neapolitan, Mantinara
and New York-style pizzas. Concurrent with
Sourdough Willy's we are opening up the Pacific
Northwest School of Pizza. Classes will be
for professionals and home bakers, including
sourdough master classes and corporate team
building.
KLONDIKE SOURDOUGH IS A STRAIN OF
SOURDOUGH THAT ORIGINATED IN THE

KLONDIKE GOLD RUSH OF 1897. Sourdough
starters, or levains, are the oldest method of
leavening breads using lactobacilli and wild
yeasts to ferment dough over several days
doubling its volume and giving it it's famous sour
flavor. Klondike Sourdough Pizza is my family's
take on New York-style pizza using sourdough
starter - giving the crust a taste of a crispy
French sourdough baguette.
I'm especially lucky to be the caretaker of a
unique starter that can be traced back to the
Klondike Gold Rush of 1897. It was handed
down through three generations before it
came to our kitchen in 1984. We have been
using and feeding that same starter for the
past 35 years never refrigerating it, making it

I'M LUCKY TO BE A SECONDGENERATION RESTAURATEUR. My dad
was a welder and my mom was a teacher
before diving into the restaurant world. All
I've known is restaurants. Each of us has
brought our own perspective and strengths
to the team. I spent all of my time when not
in school working in the restaurants and
all my time at home hearing my parents
talk about the restaurants. I was classically
apprenticed as a chef from the ages of
10 to 15 by a master chef from Italy. Though
I have spent a good part of my life working
for and running the family pizzeria, I also
have gone out of my way to branch out
and learn what I could from the corporate
restaurant side of things, as well.

Northeast.

fellow operators to take away from
my workshop would be: Confidence in
opening a new shop or revamping an
old one; how important consistency is
when running a shop; and how to follow
your numbers and be successful no
matter how busy you are."
