Peter Reinhart is the co-founder of PizzaQuest.com, a video website devoted to the never-ending search for
the perfect pizza, as well as to the celebration of artisanship wherever
it may be found. Peter is the author of 10 books on bread, pizza, and
food culture, and he has consulted with many pizzerias, bakeries and
international product-development companies. He is a faculty member and baking instructor at Johnson & Wales University in Charlotte,
N.C., as well as a popular and inspirational speaker at numerous
foodservice events and conferences.

Eric Rickman

Co-Founder and CFO, Wholly
Stromboli
Eric Rickman is co-founder and Chief Financial Officer for Wholly Stromboli East Coast
Eatery based in Fort Lupton CO. Through his
focus on systems and processes, Eric and his
business partner, wife, and best friend Melissa have grown Wholly
Stromboli from a small restaurant with a handful of employees to
a million dollar plus destination along the front range of Colorado
that's won numerous awards including being repeatedly voted Denver's Best Italian.

Melissa Rickman

Co-Founder and Operator,
Wholly Stromboli
Melissa Rickman, co-founder in 2010
with her husband Eric of Wholly Stromboli
Restaurant, has built a $1 million-plus sandwich and pizza restaurant in the small-town
of Fort Lupton, CO. She has won awards at the International Pizza
Challenge been listed on Denver's A-List of restaurants and has been
featured on the Destination America cable and satellite channel.

Scottie Rivera

Owner/Operator,
Scottie's Pizza Parlor
Scottie Rivera opened Scottie's Pizza Parlor
in Portland, Oregon in 2015, serving naturally leavened 'Newyorkapolitan' pies and
slices inspired by the old-school pizzerias he
frequented during his youth in Brooklyn. By paying living wages and
offering health benefits, Scottie runs a workplace where pizzamakers
are valued and respected.

Napoli Culinary Academy
Hassi Sadri is the Founder of the Napoli
Culinary Academy and is an expert on
employee scheduling, which is one of the
biggest headaches for pizzeria owners and
operators. Employee scheduling can make or break a business.
Create the employee schedules based upon the needs of your establishment according to your revenue rather than fulfilling the needs
and hours requested by your employees- this is paramount in your
revenue sales. What employees are begging for more hours? Which
one needs every other Tuesday off? Who do you already know in
advance is going to call in sick on game day? In this workshop, Hassi
will show attendees how to make the schedule work for their pizzeria,
control labor costs, track time, shift management, streamline team
communication to create a successful and profitable business.

Derek Sanchez
Owner, MiaMarco's Pizza
Dr. Derek Sanchez grew up in San Antonio,
where he says the owners of a nearby pizzeria
- Lucca's - set the standard that he pursued
when he began his own pizza quest.
Following a family tragedy at the age of 12,
Sanchez moved away from San Antonio. In every town or city he visited
or lived in over the years, he searched for what he hoped would be close
to the pizza he grew up with. Then, in 2005, his career as a doctor/
spine specialist led him to a small west Texas town to teach other
doctors special treatment techniques. While on this trip, he was blown
away to finally find the pizza he'd been searching for for decades. It
took him back to childhood, dinner with his family and the love of pizza
he had his entire life. And a challenge was set: How could he make
that pizza at home? Sanchez's educational background is in biology,
biomechanics, microbiology, chemistry and physics. He has a doctorate
in evidence-based medicine in Physical Therapy. In the pizza industry,
Dr. Derek has researched the evidence for over 14 years (and counting)
to produce better outcomes for pizza! While there are a plethora of
studies producing accurate, specific and sensitive evidence for treatment
protocols for patients, he says there is no such thing for pizza! So he set
out to change the game by seeking the truth and using the evidence to
produce the world's best pies.
Sanchez's goal, from day one, was to produce one of the world's best
pizzas, starting with a perfect cheese pizza. He named his pizzeria Mia
Marco's after his daughter, Mia, and son, Marco. His slogan? "A passion
for perfection". Sanchez constantly researches all things pizza and still
strives to learn, share, and understand the beauty of this most awesome
craft. He says the title of pizzaiolo is an honor that should not be taken
lightly.
