CONVENIENCE FOODS
You're probably avoiding
these already, but Hernandez
says that people sometimes
assume that vegetarian and
vegan convenience foods,
such as frozen dinners, are
healthier than those that
contain meat.
" Many packaged foods
are high in sodium as well
as phosphorus additives,
which are more harmful to
people with PKD than foods
that naturally contain phosphorus,
like nuts and seeds, "
she says. (The reason: Your
body absorbs much more
phosphorus from additives
compared with naturally
occurring phosphorus.)
If you're wondering if a
vegetarian or vegan product
is safe for you, check the
ingredient list, since phosphorus
content is rarely
included on the nutrition
label. Avoid foods that
contain ingredients with
" phos " in their names, such
as phosphoric acid and calcium
phosphate.
CERTAIN FRUITS
AND VEGETABLES
Normally, you can eat all the
fruits and vegetables you
want on a vegetarian or vegan
diet. But people with PKD
often need to limit or avoid
those that are high in potassium,
such as bananas, citrus
fruits, and leafy greens.
However, don't rush to cut
them from your diet unless
tests show that your potassium
is high.
" The traditional advice
used to be that everyone
with PKD should avoid
potassium-rich foods, but
the reality is that many
patients don't even meet
their potassium needs, "
Hernandez says.
Limiting produce that's
high in potassium is more
likely to be necessary if
you're in the later stages of
PKD, she adds. Casperite
had to give up foods like
tomatoes and avocados, but
she says that hasn't made it
any harder for her to stick
to a vegan diet. " There are
so many other options that
can fi ll the gap, like cabbage
and peppers, so I don't feel
limited, " she says.
For Casperite, switching
to a vegan diet-with her
doctor's approval-has led
to several improvements
in her health. " Right away, I
noticed that I stopped itching, "
she says. Her blood
sugar and cholesterol are in
a healthy range, and even
her migraines have gone
away. Casperite says going
vegan was helpful while she
was in stage 5 renal failure,
and now that she has had a
kidney transplant, it helps to
keep her bloodwork in normal
ranges. " My only regret
is that I didn't start following
a vegan diet sooner. "

These fl avorful vegan burgers from Cooking Well, the
PKD Foundation's online cookbook, are low in sodium
and high in fi ber.
INGREDIENTS:
1 medium sweet potato, peeled and cubed
1 can (15.5 ounces) low-sodium black beans
½ cup onion, chopped
¾ teaspoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon chili powder
Pinch of salt
1⁄3 cup all-purpose fl our
1 cup greens
1 cup panko for coating
¼ cup olive oil
4 whole-grain buns
Toppings: Avocado, spicy
mustard, greens, and
tomato

DIRECTIONS:
1 Cook potato and mash together with black beans.
2 Add the onion, vinegar, garlic powder, chili powder,
salt, fl our, and greens; continue to mash with a fork.
3 Form into 4 patties and coat with panko.
4 Fry in a pan with olive oil and serve with toppings
of your choice.
