PKDLIFE RECIPE
ALMOND MILK
One of the most popular
nondairy milks, almond
milk is often a good choice
for people with CKD
and PKD because it has
less protein, potassium,
and phosphorus than
cow's milk.
This flavorful, easy-to-prepare recipe from the
PKD Foundation's online cookbook, Cooking Well,
is low in animal protein and sodium.
OAT MILK
This plant-based milk has been
getting raves for its creamy
texture, which closely matches
that of cow's milk. It is higher
in protein than other nondairy
milks, although it still has less
than half the amount of what
you'd get from cow's milk. You
do need to check the potassium
and phosphorus contents
since they are higher than in
other plant-based milks. Oat
milk isn't appropriate for every
PKD or CKD patient. " Some
may need to avoid it altogether,
such as those who have diabetes,
since it's higher in carbohydrates
than other nondairy
milks, " Dr. Han says.
INGREDIENTS:
4 cups cooked orzo, chilled
(about 1 2/3 cup dried orzo)
1 cup dried cranberries
2 cups apple, diced
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice
½ teaspoon freshly ground black pepper
2 tablespoons fresh basil, chopped
½ cup crumbled blue cheese
(or cheese of your choice)
¼ cup blanched almonds, chopped
Orzo is
a type of
pasta.
DIRECTIONS:
1 Prepare the orzo as directed on the packaging.
2 In a medium bowl, add all of the ingredients
except the cheese and almonds, gently
stirring until well incorporated.
3 Transfer the mixture to a serving dish, sprinkle
with the crumbled cheese and almonds,
and serve.
Nutrition information per 1 ¾ cup serving:
305 calories; 7 g protein; 40 g carbohydrates; 13.5 g fat; 121
mg sodium; 146 mg potassium; 71 mg calcium; 110 mg phosphorus;
3.6 g fiber.

person and change depending on kidney function. We hope you

be sure to check the label for food additives.
" The manufacturers include additives to
enhance flavor and prolong storage; however,
these additives sometimes contain
extra phosphorus, so reading the nutrition
label is very important for all types of
processed foods, " Dr. Han says. " Finally,
everyone has different stages of CKD,
PKD, and labs, therefore all diet recommendations
and even the choice of diet
(regular vs. vegetarian, for example) should
be individualized. "
