RM | RECIPES Summertime Delights Enjoy some of our reader favorites by Heather Berry | hberry@ruralmissouri.coop Spiced Pork Chops with Peach Salsa 4 to 6 pork chops or pork loin cut into thick chops Garlic salt to taste Pepper to taste 2 to 3 tablespoons chili seasoning mix 1/2 cup of your favorite barbecue sauce Wild rice or rice of choice 2 tablespoons fresh cilantro, chopped Peach Salsa: 1 can diced peaches, well drained 1 can tomatoes with green chiles 1 fresh lime 1 tablespoon sugar 1/4 cup Vidalia or yellow onion, diced Salt and pepper to taste Turn broiler on. Rinse pork chops with cold water and pat dry. Place on foil-lined baking sheet with edges and season pork with garlic salt and pepper. Rub each side of the pork chops with chili seasoning. Broil pork chops 4 minutes per side. Brush with barbecue sauce and broil 1 minute, turning chops, then brush with more sauce and broil an additional 1 minute. To prepare salsa, combine peaches and tomatoes with green chiles in pan over low heat. Cut lime in half and squeeze juice into the pan; add sugar and onion. Add salt and pepper to taste. Heat for about 5 minutes, stirring occasionally. Prepare wild rice as directed on package; stir in cilantro. Serve pork chops and salsa over hot rice.
