BOTTLING TYPICALLY HAPPENS AROUND FEBRUARY
WHICH IS ALSO, NOT-SO-COINCIDENTALLY, A QUIET
TIME IN THE VINEYARD.
Bottling typically happens around
February which is also, not-socoincidentally,
a quiet time in the
vineyard. Before being bottled, the
wines need to be heat- and coldstabilized
which involves pouring
them into a tank and holding
them alternately at warm and cold
temperatures. This removes unstable
grape proteins and prevents the
formation of tartrate crystals. The
wines are then filtered to catch any
yeast and bacteria that might linger
and taint the batch.
For wineries that use automatic
bottling lines, the machines need a
little prep as well before their big job.
They must be sterilized with steam
for about 20 minutes before any wine
gets pumped into the system.
Bottles are loaded onto the machine,
depending on the wine that's on the
schedule.

The bottling process begins! The
bottle is purged with nitrogen,
then filled with wine. Wineries will
sometimes overfill the bottles and
then use a tool called a " leveler " to
extract the excess, leaving a perfect
750mL.
From there, the bottle goes under
the corker where it's corked using
a vacuum which makes sure that
the machine doesn't pressurize the
bottle as the cork goes in.
It then moves along to get a capsule
and the label. This step, which seems
like the most straightforward, can
actually be quite tricky. If the wine is
too cold or the winery is too humid,
condensation on the bottles can
prevent the label from sticking.
Once the labels are (properly!) stuck,
the wines head off to the tasting room
or get boxed up in cases to ship out for
retail or storage.
