Veggie Pasta With
Spring Vegetables
IngredIents

3 ounces uncooked veggie pasta*; 1 cup chopped
zucchini; 1/2 cup chopped fresh mushrooms; 1/3 cup
chopped red pepper; 1/4 cup chopped onion; 1 clove
garlic, minced; 2 teaspoons olive oil; 1 cup Italian diced
tomatoes; 6 pitted ripe olives, halved; 1/8 tablespoon
pepper; 1/4 cup crumbled reduced-fat feta cheese;
1 tablespoon shredded Parmesan cheese

Pick up a spiralizer at Target or other
home stores in The Villages and turn
your favorite garden-fresh veggies
into healthy pasta. Experiment with
cucumber, zucchini, carrots or beetroot
spaghetti, or make your own apple
slaw with the crisp, sweet fruit.

1. Cook pasta according to package directions.
2. Meanwhile, in a large skillet saute the zucchini,
mushrooms, green pepper, onion and garlic in oil until
vegetables are crisp-tender. Stir in the tomatoes, olives and
pepper, and heat through.

3. Drain pasta, divide between two plates. Top with
vegetable mixture and cheeses.
4. Add any leftover tomatoes to your favorite pasta sauce or
use as a topping for pizza.

Quick Black Bean Soup
IngredIents | serves 4

1 tablespoon olive oil; 1 large onion, diced; 3 cloves garlic,
minced; 2 cups chicken broth; Pinch of oregano; Pinch of
cayenne pepper; 1/2 teaspoon ground cumin; Salt to taste;
2 14-ounce cans black beans, rinsed and drained;
14 ounces water; 1/2 teaspoon ground black pepper

1. Heat oil in skillet and then sauté onion for 5 minutes,
until the onion turns translucent and golden.
2. Stir in garlic; cook for 2-3 minutes.
3. Add chicken stock, turn heat to medium-high.

4. Stir in oregano, cayenne and salt. Add black beans and
water. Return to a simmer.
5. Simmer on medium-low, stirring occasionally, for 20-30
minutes. While it's cooking, mash about half the beans to
thicken the soup.
6. Stir in black pepper and cumin. Salt to taste.
