Chicken Broccoli
Cheese Cups
IngredIents | yIelds 20 cups

1 pound chicken breast; 1 cup chopped onion;
1 tablespoon minced garlic; 12 ounces rigatoni
or other short pasta; 1 can cream of chicken;
8 ounces cream cheese; 1/2 cup grated
cheddar cheese; 2 cups chopped broccoli;
olive oil; cupcake or muffin tin; nonstick spray
dIrectIons

1. Cook the pasta in boiling water until it is
slightly firm to the bite, drain and set aside.
2. Use olive oil in a large skillet to sauté the
onions and garlic until translucent. Add diced
chicken and cook until lightly browned, stir in
(softened) cream cheese, cream of chicken, and
broccoli. 3. Spray the muffin tin with nonstick
spray (or use cupcake liners). 4. Spoon the pasta
mixture into the muffin cups, sprinkle the grated
cheddar cheese on top. 5. Bake at 350 degrees
for approximately 8 to 10 minutes or until the
cheddar cheese is melted. Note: Can also be
served as a casserole dish instead of cups.

Pepper Poppers Mac & Cheese
IngredIents

6 sweet bell peppers (or mini-peppers for appetizers); 12
ounces short elbow pasta; 8 ounces cream cheese (softened);
1 cup ranch dressing; 1 cup grated cheddar cheese; Parmesan
cheese; 1 cup bacon bits; 1/4 cup chopped scallions; paprika;
curly parsley
dIrectIons

1. Cook the pasta in boiling water until it is slightly firm to the
bite. Drain and set aside. 2. Cut bell peppers in half to form
cups. Remove seeds and membrane, then steam or blanch
in hot water to soften. 3. In a bowl, mix the softened cream
cheese and ranch dressing. Stir until soft and creamy. 4. Add
the bacon bits, chopped scallions, cheddar cheese and pasta.
Mix thoroughly. 5. Fill the bell pepper halves and sprinkle with
Parmesan cheese, paprika, and a sprig of parsley.
