CALIFORNIA RIVIERA PASTA SALAD

"My mother was probably the world's worst cook, so I started making the family meals when I was 14.
My grandmother was a good baker and she always supervised. My brother got stuck with the dishes! I have cooked all over
the world because my late husband was a career army officer and we traveled for 25 years and had lots of social obligations.
I made this dish often when entertaining. The original recipe calls for tomato fettucine, but that's hard to find and also
expensive. Spinach fettucine works nicely and still adds some color."

* 3 tablespoons of chopped
onion
* 4 cloves of garlic
* 1 1/2 teaspoons of dried
mustard
* 1 1/2 teaspoons of salt
* 3 tablespoons of sugar
* 3/4 teaspoon of white pepper
* 3/4 of salad oil
* 1/2 cup of olive oil
* 1/2 cup of sherry or apple
cider vinegar
* 3 tablespoons of water
* 1/2 teaspoon of dried basil
* 1/4 teaspoon of dried
oregano

1 pound of spinach fettucine
2 cups of baby peas
1 cup of chopped green onion
3/4 cups of sliced black olives
2 cups of cherry tomatoes,
halved
2 avocados, diced
1 1/2 pounds of shrimp,
peeled and deveined
Sprinkling of curry or favorite
seasoning
1 cup of artichoke hearts,
sautéed and chilled then
quartered
1 cup of freshly grated
parmesan cheese

Directions For Dressing
1. In a food processor, combine onion
and garlic and process until smooth.
2. Add next four ingredients; process
again. With machine running slowly, add
oil, then vinegar. One tablespoon at a
time, add water and herbs. 3. Refrigerate
at least two hours before serving.
4. Store extras in a jar in the fridge -
will keep up to two weeks.

Directions For Salad
1. Cook fettucine. 2. Add remaining salad
ingredients, except parmesan. 3. To keep
the noodles from sticking, toss a small
amount of dressing with warm fettucine.
Add remaining dressing once noodles have
cooled. 4. Sprinkle with parmesan cheese.
TIP: Substitute rotisserie chicken for shrimp, if desired.
