TEXAS SHEET CAKE

"My mom passed this recipe on to my sister and me," said Lisa Randolph. "Many years ago, she started making it for
family get-togethers. Now we're all Villages residents, and we continue to bake - my dad Pete hangs around to eat all the
good stuff! This dessert has a brownie-cake texture, and it's very chocolatey. It really melts in your mouth."

*	 2 cups of sifted flour

*	 1 stick of
unsalted butter

*	 2 cups of sugar
*	 1 stick of unsalted butter
*	 4 tablespoons of cocoa
powder
*	 1/2 cup of shortening
*	 1 cup of water
*	 1/2 cup of buttermilk
(make your own with a 1/2
cup milk and a teaspoon of
white vinegar )
*	 1 teaspoon of baking soda
*	 2 eggs, room temperature
(slightly beaten)
*	 1 teaspoon of vanilla extract

*	 3 tablespoons of
cocoa powder
*	 6 tablespoons
of milk
*	 1 teaspoon of
vanilla extract
*	 1 pound of
powdered sugar,
sifted
*	 1/2 cup of
chopped
walnuts
or pecans
(optional)

Directions For Cake
1. Preheat oven to 400 degrees. 2. Grease and flour
a 12 1/2-by-17 1/2-by-1 jelly roll pan (large cookie
sheet). 3. Sift flour in a large mixing bowl; add sugar.
4. In a saucepan, heat butter, cocoa, water and
shortening until it reaches a boil. 5. Pour hot mixture
over flour and sugar mixture. 6. Add baking soda to
buttermilk and allow to froth, then add to mixture.
7. Add slightly beaten eggs and vanilla. 8. Fold
mixture; don't over mix. 9. Pour onto baking sheet,
making sure the mixture is level. 10. Bake for 15-20
minutes. 11. At 15 minutes, insert a toothpick to check
doneness. 12. While it's baking, make icing.

Directions For Icing
1. Heat butter, cocoa, milk and vanilla in sauce pan.
2. Remove from heat and add powdered sugar and
nuts. 3. Pour over warm cake.
TIP: Do not let cake cool before icing.
