Grilling with The Villages Culinary School Seniors

Not only was the steak sizzling in the kitchen, the atmosphere was, too. Five seniors in the 2011/12 Culinary Arts program at The Villages High School came together to cook recipes that they devised specifically for this month’s issue of The Villages Magazine.
Student James Usalis worked on a recipe that had been in his family for years, the peel and eat shrimp slurp; while another student, Eric Didion, cut a mango for his yummy tropical summer salad. Brittany Houser grilled lamb for her dish, and Michael Hoopfer cut pineapple while his partner in crime, Thomas Bertucci, tossed a stick of butter into a pan to create a beautiful platter of grilled corn with pineapple and steak quesadilla. All of the dishes in this month’s issue are both innovative and creative, something that the culinary students strive for every day in the kitchen. During their senior year, most of the focus is on the business end of running their student restaurant. Learning to cook and run a business helps them to develop the life skills they will need to advance in any career even if it is not ultimately the culinary arts. “It’s my goal to not only teach the students about the hospitality industry, but to also give them life skills that they can carry with them always. While the program for seniors focuses on the business end of restaurants and the skills needed to be successful in the industry, if a student finishes the program with the skills to shop for and prepare meals for their family, I consider that a success,” said John Woods, director of the Culinary Arts program at The Villages High School.
