Jordan's middle name also is Edna, carrying on the
name from one generation to another.
Though the name came from up north, the food
offered at the truck is decidedly Southern, according to
co-owner J.T. Tubby, the other half of the husband-andwife team who own and maintain the food truck.
"Our food truck has a large smoker
on it - probably the last quarter of it is
this huge smoker," J.T. said. "So it naturally lent to barbecue. The guys (working) there are Florida-born and bred -

is seventh-generation Wildwood and did
the culinary program at Withlacoochee
Tech and their interest is Southern kind
of food."
On the menu at the food truck are a
selection of sandwiches, meats and sides,
including a beef brisket sandwich topped
with skillet mac n' cheese, fried pickles

and a southern smashburger with
pimento cheese.
Along with the barbecue options, J.T. says the food truck also
offers greener alternatives such as
locally sourced salads with seasonal
vegetables and grains. The truck
serves breakfast from 8 to 10 a.m.,
with options such as a breakfast
wrap, blueberry buckwheat pancakes and a shrimp and grits dish
with Andouille sausage, shrimp,
peppers and Antebellum grits.
Both Jordan and J.T. say the food
truck's shrimp and grits is one of
their favorites, and Jordan speaks
very highly of the cornbread created by one of their chefs.
"Bryce's grandmother has a recipe for cornbread and he brought
that to us," she said. "I love cornbread, and this is the best cornbread
I've ever had. It's so good, I could
have just cornbread every day."
Along with the single-meal options, the food truck also offers family-sized portions, giving Villagers a perfect to-go option
for a family dinner.
"We're looking to be that community place where
people can come down here and maybe buy a whole
chicken and some sides and take it home and that's
almost their kind of to-go meal," J.T. said. "You can buy
a cup or a quart of our sides so that's enough to feed
