Dishes prepared by Luis Guzman Monkfish INGREDIENTS 8-10 ounces monkfish; 5 ounces fresh spinach; 4 ounces jasmine rice; 1 teaspoon minced garlic; 3 ounces house-made coconut curry cream sauce DIRECTIONS 1. Season the monkfish with salt and pepper and put it on the grill. Cook for approx. 6 minutes each side for perfectly cooked monkfish. 2. Rinse the spinach, and sauté for approximately 3 minutes in a pan with fresh minced garlic, and butter. Season with salt and pepper. 3. Cook jasmine rice according to package directions. 4. Place the sautéed spinach on the plate, add the monkfish on top of the spinach, use a scooper to form a round of rice on the side of the dish, and top with house-made coconut curry cream sauce, and enjoy!
