Food Cider-Braised Pork Shoulder INGREDIENTS 2 pounds trimmed pork shoulder cut into 4 to 8-ounce portions; 1/4 cup brown sugar; 2 teaspoons salt; 1 teaspoon pepper; 1 teaspoon smoked paprika; 1 teaspoon onion powder; 4 cups apple cider; 1/4 cup vegetable oil; 1/4 cup butter DIRECTIONS 1. Combine brown sugar, salt, pepper, paprika, and onion powder and rub onto pork shoulder portions. 2. Heat oil and butter in skillet over medium heat. Add pork and brown on all sides. 3. Remove pork and place in roasting pan. 4. Deglaze skillet with half of the apple cider. 5. Pour cider from pan and remaining cider over pork shoulder. 6. Cover and place in 325-degree oven for 2-3 hours or until fork tender. 7. When done, pour off some of the cooking liquid and thicken slightly with a cornstarch slurry and use as a sauce for the pork. 38 NOVEMBER 2021
