Sweet Potato Pecan Pie INGREDIENTS Sweet Potato Filling: 1/2 pound sweet potato cooked and mashed; 1/4 cup butter, softened; 1/2 cup white sugar; 1/4 cup milk; 1 egg; 1/4 teaspoon ground nutmeg; 1/4 teaspoon ground cinnamon; 1/2 teaspoon vanilla extract Pecan Pie Filling: 2 large eggs; 1/2 cup sugar; 1/4 teaspoon salt; 1 tablespoon melted butter; 1/2 cup light corn syrup; 3/4 cup pecans; 1/2 teaspoon vanilla DIRECTIONS Sweet Potato Filling: Combine all ingredients and pour into prepared, unbaked pie crust. Bake at 325 degrees for 15-20 minutes or until slightly firm. Pecan Pie Filling: Combine all ingredients and pour pecan filling over baked sweet potato pie and bake for additional 15 minutes or until pecan filling is set. Allow to chill overnight and serve.
