sectors," says Chip.
When he finds free time, he and his
seven-year-old Australian Shepherd,
Jack, can often be found exploring
one of northeast Ohio's many parks.
Chip also enjoys exploring the area
by bicycle and checking out the local
hiking trails. The Ohio and Erie Canal
Towpath Trail is a favorite. "I'd be
doing a disservice if I didn't recommend our parks to those coming for
the Annual Meeting," says Chip. "The
Cuyahoga Valley National Park is just
south of Cleveland. I think people are
going to love it."
Beyond his love for the outdoors,
his other hobbies are the perfect blend
of his background in food science
and mechanical engineering - home
brewed beer and tinkering with cars.
"I've come a long way professionally and geographically since my first
career choice in mechanical engineering," admits Chip, who fell into and in
love with the area of food science.
WHAT'S YOUR FAVORITE FOOD AND WHY?
Boiled peanuts. It's a snack food but traditional to my South Carolina roots.
WHAT FOOD DO YOU AVOID AND WHY?
Raw oysters. I don't like them from a texture standpoint but they're also very
risky from a food safety standpoint.
FAVORITE FOOD SAFETY TIP?
I recommend checking your fridge to make sure it's functioning properly. Keep
it at or below 40°F, or else your food could be negatively impacted from both a
shelf life and food safety standpoint. A thermometer is an easy way to do this.
And, wash your hands!
WHAT'S YOUR MOST MEMORABLE IAFP MOMENT AND WHY?
Landing my first job at the Annual Meeting as a student. A lot of students don't
realize the power of networking, especially at an event like that and I am the
perfect example of what can happen through the power of networking. My
second moment is in 2010 when I attended as a travel scholarship recipient.
The support I gained was long-lasting and really made an impression.
WHAT RECOMMENDATIONS DO YOU HAVE FOR THOSE ATTENDING
IAFP 2020 IN CLEVELAND?
The Rock and Roll Hall of Fame is a must see! A little-known fact about
Cleveland is that its Playhouse Square district is the largest performing
arts district in the country outside of New York City. The University Circle
neighborhood is home to over ten museums. I recommend the Museum of Art.
Best of all, it's free! The Cleveland Orchestra is consistently ranked one of the
best orchestras in the world. And finally, don't forget to check out all the parks
and trails that this part of Ohio is known for!
