INOFOOD and IAFP's 7th Latin American Symposium on Food Safety
Held every two years, the INOFOOD Summit is
a forum for high-level discussion in Latin America, of
the most significant issues related to safety, quality, and
technology in the food sector. The IAFP Latin American
Symposium on Food Safety attracts attendees from
many international countries who in the past have come
together to discuss the latest information, trends, and
technologies. In 2020, the INOFOOD Conference
was held in conjunction with the IAFP Latin American
Symposium on Food Safety November 11-12. After
the need to reschedule twice throughout the year due to
the ongoing pandemic, the conference successfully took
place virtually.

The event included two days of seminars,
sessions, and workshops. Registered
attendees were also able to take part in poster
presentations and the virtual EXPO, which
received high attendance. David Tharp, IAFP
Executive Director; Edison de Fraia, Eurofins
Brazil; and Michel Leporati, President of the
Chilean Corporation for Food Protection, Chile,
opened the joint meeting with welcoming
remarks on Day One. This was followed by
the two-part seminar, " Imagining the Future
for Safe and Reliable Foods, " with IAFP Past
President Kali Kniel, University of Delaware,
and Andrea Moreno Switt, Catholic University
of Chile, among several presenting. In between presentations, the INOFOOD Award was presented to IAFP's Affiliate,
the Chilean Corporation for Food Protection, and the Chilean Agency for Food Safety and Quality for their spirit of " Safety
Culture. " Several sessions followed the seminar with a wide array of speakers including Joy Dell'Aringa, bioMérieux Industry
AMERICAS Region; David Acheson, The Acheson Group; Diego Rómulo, Life Sciences Group Bio-Rad, Latin America;
and Elisa Gutiérrez, Thermo Fisher Scientific. Topics covered were " Laboratory Determinations for Current Challenges " ;
" Hygiene, Environment & Pest Control: The New, the Complex, the Applicable " ; " Update on National and International Market
Regulations; " and " Detection Techniques in Laboratories: Advances for Better Precision and Speed. "
Sessions continued throughout Day Two and included topics
on " Microorganisms in the Look: General Challenges
and in Specific Foods " ; " Innovation in Food: Proposals for
10 Trends in Food " ; " Rebuild a Culture of Safety from the
Pandemic: Experiences and Lessons Learned " ; " Sharing
Challenges in Salmon " ; " The News Panel: The Latest in
Ingredients, Measurement Methods and Product Formulation " ;
" What's New in Detection: The Unmissable Challenges " ; and
" Management in Small and Medium Operations: The Challenges
of Integrating and Being Audited. " Among the many session
presenters were Fabiana Guglielmone, Unilever and President/
Delegate of the IAFP Affiliate, Argentine Food Safety Commission; Juan Luis Silva, Mississippi State University;
Dr. Leporati; and Dr. Kniel. The day also included a workshop covering " Thinking of Designing or Remodeling a
Laboratory " ; " Assurance Planin Times of COVID-19 " ; and " Laboratory Accreditation, an International Vision. "

INOFOOD and the Latin American
Symposium on Food Safety provide
valuable opportunities for attendees
to continue to pursue and expand
their efforts to improve food safety in
Latin America and around the world.
