Pan Bruto ^ An engineer by training and an
inveterate tinkerer in the cellar, Luis Pato
continues to develop variations on baga,
the local grape in Bairrada, including a
range of fascinating sparkling wines. This
2011 comes from baga grown on chalky clay
soils and harvested early; it's exclusively the
white free-run juice. He ages the wine for
three years on the lees, presenting a bright,
refreshing sparkler with tart notes of currants
and strawberries, and herbal scents, like
tarragon. It's crisp and clean, with plenty of
bubbles adding to the wine's cut. Ready to
