Giuseppe Scirto and Valeria Franco practice
organic farming on their ten acres of vines
high on Mount Etna's northern slope. They
make A' Culonna from nerello mascalese and
nerello cappuccio vines averaging 80 years
of age. The wine stakes out a position on the
"natural" end of Etna's stylistic spectrum: It's
fermented spontaneously, aged in large oak
casks and bottled without fining, filtration
or added sulfur. Initially a little volatile, it's
charmingly rustic, with flavors of sour plum
and grilled game framed by raspy tannins.
