TREND: Marinades to the Rescue
In addition to meat extenders and meatand-plant
hybrids, culinologists at ADM have
developed a variety of marinades that infuse
rich flavor into meat, poultry, seafood, meat
alternatives and ready meals while creating
value. Made with carefully balanced acids

steak, skirt steak and chicken
thighs, marinate them and get

support several clean label claims in a portfolio
that includes such offerings as African Harissa,
Roasted Garlic Herb, Lime Cilantro, Honey BBQ,
Asian Teriyaki and a Peruvian Pollo a la Brasa,
among others.
Restauranteurs and food producers can use
these chef-crafted marinades to enhance the
flavor of meats, including smaller portions and
value cuts that have less marbling than costlier
cuts. Marinades also help cooked products retain
flavor, so they remain tender and juicy.
" One of the fundamental things we learned in
culinary school is that fat equals flavor. When you
use lean cuts of meat, which are usually more
inexpensive, you want to be able to add
flavor back using either a flavor system
or a complete marinade. A one-step
marinade is a great way to deliver
flavor. Additionally, our customers can
add signature tastes to the marinade to
make it truly their own, " notes Stepler.

On that point, marinades can showcase all kinds
of inventive and trending flavors, including the more
robust and spicy profiles that are in demand right
now. " We're seeing a lot of that, with ingredients
like Calabrian chiles and other spicy varietal
peppers, " reports Michael Cocco, Senior Food
Scientist, Creation, Design & Development at ADM.
" Global is a big trend, too. We are getting more
requests for specific global flavor profiles including
Middle Eastern and Latin American. Both exhibit
different, unique flavor nuances and are highly
seasoned. "
" There's also the health and wellness
aspect to this - when you marinate
and grill a piece of lean meat, it
can be a better-for-you option. "
