When developing a product line, first look within.
BY JOANIE SPENCER When you develop a new product, where is your starting point? Rachel Lora Simmons, owner of Petticoat Pies in Kansas City, MO, can trace each of her pies back to lebkuchen, German Christmas cookies. “Growing up, we made these cookies in my family, and it was this process that the whole family was involved in,” Simmons says. “My mom had our hands in the dough when my sister and I were 1 and 2 years old.” Simmons’ love of baking was born in the lebkuchen dough, and it grew along with a passion for natural, wholesome foods that she shared with her mother — from the scratch recipes, to the apple tree in the back yard of her childhood home. And these childhood experiences were central factors in starting Petticoat Pies — the business began with a collection of family recipes from her mother and grandmothers and family friends. Simmons’ upbringing was also central to her passion for natural foods, which lent itself perfectly to pie Using signatures to innovate After a year in business, Simmons, who creates at least one new sweet and one new savory pie each week, has developed her Oatmeal Pie — which comes from her mom’s original recipe — into a basic signature item that she then tweaks into different variations, such as substituting blueberries for the coconut. “I’ve spent some time working with kids, and also expanding my own palate, and I’ve found that the more you know about a vegetable or fruit, the better you can make it taste,” Simmons says. “Now I draw a lot of inspiration from going to farmer’s markets or being out in the garden, seeing what looks good.”
