UPSCALING WITH CHOCOLATE
Easily added to your baking schedule, use imported chocolate to upscale your products. Americans have become so hyper-aware of their chocolate choices that companies are touting cacao percentages, flavanols, antioxidant contents and mood-inducing properties. Thanks to marketing efforts and the desire for betterfor-you products, customers know more than ever about high-quality chocolates. And the confection fits the bill for three characteristics that keep customers coming back for more and more — it’s high end, healthful and, in some locations, created through sustainable practices. • High End: Chocolate is in the unique position of being both indulgent and better-for-you. Just don’t forget to let your customers know about the high quality of your ingredients. • Healthful: Consumers are really latching onto the health benefits of chocolate, including flavanols and antioxidants. • Sustainable: As consumer loyalty for companies employing sustainable practices strengthens, it is important to purchase ingredients that are fair trade and organic.

Joy & Cake’s base cupcakes sell for $2 apiece and have a small ﬂower and some pearls. “If you want to get a little bit more elaborate, we do more detailed ﬂowers that we put on the cupcake,” Rosati says of the second tier. “In our top tier we do a lot of ﬁgures. Little fairies or bees or characters that people want, so if it’s a little more elaborate, it goes up from there.” The second important thing to get a higher price point comes from the same place as most valuable knowledge: experience. “I have learned over the years which high end additions I can make for cupcakes that are quicker to make then others,” Rosati says. “For example, ladybugs vs. bumblebees on garden themed cupcakes.” Figure out a tiered system for your cupcake pricing, know how much time and labor will be spent on different designs and ﬁnishes and get creative, and you’ll be on your way to selling more cupcakes at higher prices.
