For your food truck, you need to figure out which items you’re going to sell before you do anything else. Make your food truck menu easy to understand by offering just a handful of items that are known sellers. Too many menu items cause delays in service as customers stand at the service window asking questions and trying to figure out their order. If you’ve created offerings that get you the long line you want, if service is too slow, folks at the end of the line might move on. Establish your brand, then consider your menu. Once you hammer out these details, then consider the actual truck. Only this way can you conceptualize, design and equip a truck that accommodates your business’ needs. Roll out “Location, location, location, I would say for food trucks, is the most important thing after the brand, if not the most important thing,” Resnick says. Creating that long line of customers at your food truck hinges on going to where the consumers you’re targeting are. “That is something that’s going to dictate the size of your truck, what you can serve, how you can serve, who you can serve and when you can serve.” You must know your city. Is your city urban, like New York or Chicago? Or, is your city sprawling like Los Angeles? Will your customers be in business parks or suburban parking lots, or will you serve in downtown districts with heavy foot traffic? It is essential to research places and occasions in which food trucks will likely do good business. If possible, team up with other food trucks in your city and work together to bring the food to the masses, Resnick says. Use your research to find successful food trucks and go to the places they go. Focus on your eaters Choosing your locations needs to revolve around your target demographic. Know where your eaters live, work and play, and take your food truck to where they are. “Focusing on who is most likely to consume [your food] is tremendously important,” Resnick says. “Even though you build your brand and your communication strategy around one group of people, try to cast a wide net and try to get the people who are most likely to eat on your side.”

LEGISLATIVE
Part of starting a food truck involves knowing many different areas of the law. Laws pertaining to health codes for food, zoning, trucking, parking and business all come in to play. The governing bodies that regulate these areas most often work independently and sometimes conflict with one another. Navigating the regulations is imperative to starting and succeeding with a food truck. The following are some tips on how to get started on the legislative end. • Health permits are usually handled by counties (If you plan on serving in more than one county or state, you must have a permit for each). • If you’re going to operate, you may need an additional business license for your food truck, and in some cities you’ll need a vendor permit. • Parking restrictions are very city specific, and if you’re planning to serve in more than one municipality, know that parking laws will differ.
