Holiday Merchandising
As Hispanic bakeries gain more customers from all types of origins, it’s important to capitalize on key holiday sales opportunities that cover both American and Hispanic celebrations. Panaderías in Kentucky and Ohio offer numerous examples of how to do this successfully. During winter months leading up to Christmas, Panadería Araceli’s in Lexington, KY, promotes cookies with holiday decorations and also bakes specialty cakes such as Tronco Navideño. This cake consists of chocolate, whipped cream and strawberries – all rolled in between layers of cake and covered in chocolate. El Rancho Tapatio in Lexington takes advantage of the fall and winter holiday seasons with big displays for Halloween, Thanksgiving and Christmas. “For Halloween, we decorate scary looking cakes in different characters like Frankenstein, spiders or cats. I get a catalog from BakeMark that makes it easy,” says Priscila Rios Hale, co-owner of El Rancho Tapatio bakery. “We decorate cakes for Thanksgiving, along with decorations of a turkey. In the fall, we do a lot with pumpkins. We sell a lot of pumpkin-filled empanadas and pumpkin pies. Then for Thanksgiving, we start to see more sales of cakes, and we also sell of a lot of flan for Thanksgiving.”
HISPANIC HERITAGE MONTH

The first seasonal opportunity for the fall comes during Hispanic Heritage Month, which begins on Sept. 15 and continues through Oct. 15 every year. The start marks the anniversary of independence for five Latin American countries: Costa Rica, El Salvador, Guatemala, Honduras and Nicaragua. In addition, Mexico declared its independence on Sept. 16. The term Hispanic, as defined by the U.S. Census Bureau, refers to Puerto Rican, South or Central American, or other Spanish culture or origin regardless of race. On the 2010 Census form, people of Spanish/

Hispanic/Latino origin identified themselves as Mexican, Mexican American, Chicano, Puerto Rican, or Cuban. According to the 2010 Census, 50.5 million people or 16% of the population are of Hispanic origin. This represents a significant increase from the 2000 Census, which registered the Hispanic population at 35.3 million or 13% of the total U.S. population.
HALLOWEEN/DAY OF THE DEAD

Cake and cookie sales get a big boost during the weeks leading up to Halloween. In preparation, create dramatic displays of Monster Head cakes, and don’t forget Frankenstein.
