Now, customers can enjoy the convenience of fresh bakery, groceries and restaurant food all in one central location. “In the summer, our bakery sales are not as good as they are in the winter, but the restaurant business picks up in the summer,” Hernandez says. “It all balances out and helps each of our businesses stay in good shape. And the grocery store helps a lot with buying power. I can get pallet prices on produce and other products. So when I need something for the bakery or the restaurant, I get the produce from my grocery store. That helps us a lot.” Bread sales peak during the winter months. During summer months, Panadería Super Mercado sells more cakes and pastries than bread. Hernandez says that everyday popular breads like conchas, bolillos and teleras are the top sellers nowadays, as customers continue to seek out value. During the winter, he adds that coffee sales also go up, right along with bread sales. The bakery installed a convenient coffee station for customers to enjoy hot coffee with their daily breads and pastries. “In the summer, we will go through two cases of coffee a week,

but we go through 10 cases of coffee a week in the winter,” he says. Hernandez characterizes his bakery as a traditional Mexican bakery, which also serves customers from El Salvador, Honduras and other Hispanics. Non-Hispanics comprise about 10% of their customers. “We are making a $500 wedding cake for a wedding coming up in September,” Hernandez says, offering one example of a recent order from a non-Hispanic client. “I feel good about that. People are finding out who we are and learning about our reputation for quality. People go crazy for our tres leches cakes, which we make with Trigal Dorado Tres Leches Cake Mix from BakeMark. I’m proud that people like our products so much.” Another source of pride is that the third generation of the Hernandez family now works in the family business, which is something that makes Manuel Hernandez very happy. His granddaughters work in the store, as well as his two sons. “We’ve got a lot of family in our stores,” he says. “My 14-year-old granddaughter spent her childhood running around the store. The whole town knows them.”
