The Retail Bakers of America (RBA)
Roadshow, which took place in December,
proved a rousing success with bakers, vendors
and attendees of the new expo/seminar held
at Kendall College in Chicago. The next RBA

Here are highlights from the Chicago event:
01 Qualify the sale
Did you know 80% of companies believe they
deliver superior customer service, while only 8% of
their customers agree? Renee Rouwhorst of Ryke’s
Bakery presented an educational session in which
she shared the importance of qualifying the sale — in
other words, helping customers understand what
they are paying for. Rouwhorst recommends training
your sales staff to dig deep into what customers are
looking for and then off er options that will meet or
exceed their expectations.
02 Cake costing spreadsheets
“Why all this obsessing about the weight of a batch?”

points out Beth Fahey, co-owner of Creative Cakes in
Tinley Park, IL. “Well, the weight of a batch is important
because at the end of the day, it allows you to
compute the cost per pound for your recipes. The cost
per pound is important, because as you grow, you will
need to control not only your product costs, but the
consistency of your products, too. Someone else may
be ‘scaling out’ recipes for you someday. The weight of
each cake layer needs to be the same every time.”
03 Comeback of quiche
Quiche is making a comeback in a big way on the
breakfast and lunch menus of retail bakeries such
as Dinkel’s Bakery & Cafe, a Chicago institution
