CAKES AND DECORATING
Mil Hojas and
Tres Leches
For many years, mil hojas cakes
have been regarded as a pastry delicacy
only to be enjoyed on special
occasions. Like its French counterpart,
the Napoleon, mil hojas is produced
with fl aky layers of puff pastry, fi lled
with pastry cream and topped with
fresh fruit slices.
But what is happening now, as
customers become more familiar with
unique pastries, mil hojas is moving into
the mainstream and approaching tres
leches cakes as one of the most popular
Hispanic desserts in certain parts of
the country.
"We make mil hojas cakes all yearround,
sometimes every day," says
Alma Ignacio, owner of Maravilla's
Bakery in Salem, Oregon. "We top
them with fi ve kinds of fruit: kiwifruit,

strawberry, pineapple, peach and
grapes. We bake it from scratch.
They call it mil hojas because of the
fl aky layers."
Half sheets of mil hojas cakes
are the most popular size sold at
Maravilla's, while at Miranda's Bakery
in Woodburn, Oregon, full sheets
and half sheets are very popular.
"More people here buy the big cakes,"
says owner Gustavo Miranda, who
started the bakery eight years ago.
"I lived in Los Angeles before, and I
brought the mil hojas recipe with me
from Los Angeles. The fruit and the
fl aky layers of dough make a unique
fl avor. We use strawberries, peaches,
kiwifruit, pineapples and grapes, and
we do a jelly glaze on the top to
make it special."
Miranda's makes the giant full
sheet mil hojas for customers who
buy them for special occasions,
and this cake is also available in
individual portion sizes, or single
slices. Other bakeries in Oregon
offer individual slices of mil hojas,
showing that it is becoming popular
as an everyday item.
"Sometimes people just want to
try a little piece of cake," says Ignacio
of Maravilla's Bakery. "I still sell more
whole cakes than slices. We make tres
leches cakes in individual sizes, and
they sell pretty well. We cut the cake
into square pieces and put each in a
plastic container."
Ignacio travels a lot for business,
and when she goes to other cities, she
always makes sure to take photos of
