Premium Pricing
Retail food products take cost as the biggest consideration
when pricing. Using premium, high-quality ingredients ups
the cost of production and retail pricing. Acquiring ingredients from a local farmers market presents a great promotional
opportunity as well as an upsell. Fresh fruit and produce, in
addition to natural and organic ingredients warrant premium
prices, as well.
If you're going to offer salads with a protein, make one or more
of your items grass fed beef, free range poultry, no antibiotic,
etc. Consumers will pay more for these menu items. Today's
salad consumer is already trying to eat healthier by ordering
a salad. By adding an additional health benefit, diners will be
willing to purchase these items at a higher price.
Use charcuterie like salami, pepperoni, and other premium
Italian meats in your salads. These premium quality specialty
meats will appeal to the consumer more interested in flavor, but
still looking for a healthier lunch option. Again, the better the
quality of the meat, and the more specialized the variety, the
