las panaderías están respondiendo con
determinación y espíritu innovador para
brindar confort y alegría a los clientes
locales en todo el país. Éste sigue siendo
un momento agitado, pero no uno sin
optimismo. Porque son los auténticos
sabores de panes y productos dulces
nativos de América Latina los que evocan
sentimientos reconfortantes de días
mejores por venir. El pan es la esperanza.

Para Amelia Vaca Santoyo en Carnitas
Uruapan en Lamont, California, la panadería
de sus padres, esta pequeña ciudad agrícola
en el centro de California recibe diariamente
a cientos de clientes que disfrutan de los
auténticos bolillos y las tortillas de la panadería,
productos básicos en la mayoría de los hogares
latinos. Esta pacífica ciudad de 15,000 personas
es 95% hispana, uno de los porcentajes más
altos del país.
"La mayoría de nuestros clientes son latinos.
Dado que los trabajos agrícolas se consideraban
esenciales, la mayoría de las personas continúan
trabajando durante la pandemia," explica
Santoyo. "La demanda por los comestibles
y pan arrancó. No podíamos cumplir con
