sidro Pérez, dueño de Marissa's Bakery,
una de las panaderías más antiguas
y establecidas en Minneapolis,
Minnesota, admite que está feliz de que
sigan siendo un pilar de su comunidad,
sobreviviendo un año difícil en el que la
pandemia de COVID-19 creó una gran
cantidad de desafíos para las empresas
independientes.
La panadería es famosa por sus panes y
repostería fresca, incluyendo dos tamaños
de bolillos, uno grande que se vende por
$1.25 cada uno y los más pequeños que
cuestan 60 centavos.
" Podemos crecer más, " dice
sucintamente. " Todo se hace fresco hoy y
los clientes saben que pueden encontrar lo
que buscan. Por eso tenemos éxito. "
" Sobrevivimos porque la panadería es
una de nuestras prioridades, " explica Paola
Torres, gerente de oficina. " Permanecimos
abiertos durante la pandemia. Queremos
que nuestra gente siga trabajando y que
nuestros clientes estén contentos. "
A medida que se acerca el verano, se
concentran en más pasteles y antojos
dulces. Las galletas son una de las golosinas
más populares del verano y venden muchas
variedades deliciosas.
Hace varios años, la panadería
experimentó una gran expansión para
adaptarse a la creciente demanda por sus
productos frescos de panadería. Su enorme
tienda ahora cuenta con un departamento
de panadería que ocupa aproximadamente
la cuarta parte de los pies cuadrados totales.
Renovaron el espacio de la panadería y
agregaron nuevos equipos, incluyendo un
nuevo horno de rejilla en el departamento
de panadería.
La familia Pérez comenzó en Minnesota
en noviembre de 1998 cuando abrieron
las puertas de su negocio, Marissa's Bakery,
que, además de un departamento de
panadería fresca y carne fresca, operó una
de las primeras tortillerías en el estado.
Isidro Pérez originalmente creció en San
José Quebrantadero en Morelos, México.
Llegó a los Estados Unidos hace casi tres
décadas en busca del sueño americano.
En un principio, se instaló en Chicago en
1974, donde trabajó durante muchos años
en la industria automotriz.
Pérez soñaba con abrir algún día su
propia panadería pequeña, un oficio que
su familia había seguido durante varias
generaciones. Al final, había ahorrado lo
suficiente para mudarse a Minneapolis,

donde abrió su tienda en una sección
concurrida del centro de la ciudad en
Nicollet Avenue.
Las ventas minoristas representan una
gran parte de las ventas, pero también
venden una gran cantidad de productos
de panadería (principalmente teleras) a
cuentas mayoristas, como los restaurantes
independientes. De ahí resultó la necesidad
de ampliar las líneas de producción y
nuevos equipos.
Hace aproximadamente cuatro años,
agregaron un nuevo almacén en el segundo
nivel y un nuevo restaurante y salón de
recepción en el tercer piso con una terraza
en la azotea.
