come from a specific region of France- the
Adour Basin. In addition to the ingredients
that constitute the ham, the things Bayonne
Hams lack contribute to their attractiveness
within the American foodie movement as well.
No preservatives, no genetically modified
organisms (GMOs) and no antibiotics give the
product preference among buyers looking
for unique and special ham products. These
qualities all come together to create an
inimitable flavor, a clean label and a product
narrative that foodies from all over the world,
and especially in the US, look for when they
decide which foods to purchase and eat.
Protected Geographical Indication (PGI)
represents the importance of region, history
and tradition in the production of Bayonne
Ham. The European Union created PGI in 1992
and on October 7, 1998, European Decree
formalized the PGI status of Bayonne Ham,
the first French food product awarded the
status. PGI officially guarantees the origin of
products, informs consumers of a product's
specific characteristics and protects their
geographical names from imitation and
usurpation.

mouth' texture," says Florane Gambert-Jouan,
USA Representative Consortium du Jambon
de Bayonne. "Thicker slices taste slightly
more savory, which makes them perfect for
cooking. This range of tastes and possibilities
comes from the PGI spring salt used for
curing ham. This natural salt has been
around for millions of years and is sourced
responsibly from the Salies de BĂ©arn, in
