LIQUID ASSETS THUMBS UP FOR GOURMET COFFEE Conventional wisdom is that people drink more coffee where it’s cold. After all, Finland drinks three times more coffee than the United States (although, you might ask, what else is there to do during the winter in Finland). Yet, when it comes to drinking coffee, Americans are as fickle as the economy. We are just as likely to drink coffee when it’s warm outside as when it’s cold. Consider that half of the top coffee-drinking cities in America are located in warm-weather states (see chart below). When you layer on the fact that Americans are the world’s biggest fans of gourmet coffee blends, it all starts to make a little more sense. U.S. consumers continue to demand higher quality coffee, as shown by a 2010 National Coffee Association survey that reveals 40% of all coffee consumed in America is now considered to be gourmet. Overall, coffee consumption remains strong. More than half (56%) of Americans say they have consumed coffee in the past day – a figure unchanged over the past three years. Further, 84% of consumers have not changed their consumption habits despite the economic environment.  As a retail bakery, the best advice you can take, if you haven’t already, is to team up with a local or regional coffee roasting company to create your own coffee blends. Even better, create your own branded lineup of three or four custom blends and market your coffee brand at your bakery and your website. Customers will seek out your bakery for those custom blends that are flavorful and unique. Some bakeries roast their own coffee, which can be even more profitable if you are a successful bean counter. Still, in light of the current coffee market, here’s a word of caution: Coffee bean prices are on the rise. In New York, the benchmark May futures contract for Arabica coffee beans recently reached $2.784 a pound, the highest level since $3.40 in 1977, an all-time record. During the past year, prices rose by 145%. Industry insiders say Arabica bean coffee prices are headed to at least $3 a pound. Retail prices of roasted coffee in the U.S. have jumped 29% since 2004, according to the International Coffee Association. Retail bakeries report the price they pay for coffee beans doubled in the past year. This situation has led to a string of retail price increases that has not inhibited consumption growth in the U.S. Many nations are struggling to sustain their coffee crops while demand keeps rising. As a result, inventories have fallen to their lowest levels since the International Coffee Organization (ICO) started tracking this data in the 1960s. So as you plan ahead, remember that coffee prices may be trending upward, but consumer demand for gourmet coffee is heading in the same direction.
