INDUSTRY NEWS WP Bakery Group Joins Industrial Market For the first time, the entire industrial line of WP Bakery Group equipment is now available to bakeries in North America. Newlyhired Jim Souza will spearhead the industrial sales division at WP Kemper Bakery Systems, Shelton CT, as Vice President and Director of Industrial Sales, giving customers access to WP’s award-winning technology and cutting-edge SOUZA equipment used around the world. Jim Souza will focus on industrial and turnkey projects, including mixing, donut lines, laminating lines, oven systems, cookie-cracker systems, and roll and bread lines. Educated in mechanical engineering, Souza has worked for the past 20 years in the food and dairy industries, directing and managing operations, engineering, sales, and customer relations functions on a global scale. Prior to joining the WP Bakery Group, Souza led industrial sales at I.J. White Systems, a spiral cooling manufacturer. Wilton Survey Reveals How America Bakes Baking is back!  This trend was recently confirmed by the bi-annual Celebration Report on How America Bakes, Decorates and Celebrates. The extensive online survey report was conducted by a third party source on behalf of Wilton Enterprises. “We found that nearly 75 percent of survey respondents reported baking the same or more than in previous years,” says Nancy Siler, vice president of consumer affairs at Wilton. Key findings from How America Bakes: Impressively, one-in-four respondents view themselves as regular bakers, stating that they bake at least once a week. While cookies are the most popular homemade treat (82% of respondents), items that have significantly grown in popularity since 2008 are: cakes (up 17%), brownies (up 18%) and cupcakes (up 15%).
