BREADWINNERS Celebration Bread Every product of the Di Camillo Baking Company, based in Niagara Falls, NY, derives from their family heritage, from their traditions and from their belief that exquisite foods lovingly prepared are not only an art form, but also an expression of life—reminders of past celebrations, heralds of celebrations to come. “Baking is not an easy way to make a living,” says Michael Di Camillo, vice president of marketing and sales, “but it’s a rewarding one.” Holidays are a big part of merchandising efforts, as evidenced by festive decorations prior to Saint Patrick’s Day, Saint Joseph’s Day (March 19), and Easter. “No holiday goes unnoticed around here,” Di Camillo says. For Saint Joseph’s Day, a major holiday for Italians, Di Camillo Bakery produces various shapes of breads to honor the celebration known as the Feast of Saint Joseph. Breads are shaped into crosses, hearts, canes and other shapes for special Saint Joseph’s Day bread displays in the store. Scaletta Bread is Di Camillo Bakery’s signature item—crusty on the outside and soft inside. Tom Di Camillo, who oversees baking, explains that to make Scaletta bread, you start by rolling out the dough by hand into a long, tightly formed dough piece. Then you make a series of bends in the dough and squeeze everything together to form a onepound loaf. Once baked, the bread loaf pulls apart with ease. “Bread has been the foundation of our baking since we started in 1920 when my grandparents started the business,” Michael Di Camillo says. In 1920, with the help of their eleven children, Tomaso and Addolorata Di Camillo opened their first bakery in Niagara Falls. Today, the bakery operates five locations.
