SMALL TOWN BAKER BY SHIELA RABE CANDO BAKERY, CANDO, ND One fine summer day, a young man strode into the bakery, bellied up to the display case and pointed to the chocolate-dipped donuts. I thought to myself, now here’s a fellow who knows what he likes and isn’t afraid to say so. Blue eyes glistening in anticipation, he solemnly accepted the doughnut and made his way to the corner table. The usual morning A new generation of Cando Bakery customers carries on tradition. coffee crowd who were gathered around the front table watched him take his first bite, evidently amazed by the spectacle of a true donut gourmet enjoying his favorite nosh. Or maybe it was the fact that Michael was just shy of his third birthday and was displaying such decorum for someone his age. That was more than a year ago. Since then, Michael has matured into an almost 4-yearold. He still loves donuts, but the current preference is a juicy jellyfilled Bismark. He is accompanied on these visits to the bakery by his mom, Esther, and younger b r o t h e r A n d r e w. Michael also has two older siblings in school, Kansas is nearly 8, and Thomas coming 7. The T four children have all inherited their parents’ brunette good looks, but it is Michael who has captured my heart. Michael’s father, Brock, is a second- generation Candodian. His mother and father, Denise and Bill, are now retired—Denise from teaching and Bill from the military. Brock is a chaplain with the North Dakota Army National Guard. He met Esther while attending Bible College in Manitoba. They were married in 2002 and have lived on both sides of the border while attending school. For the past few years they have enjoyed life in Cando. Their hope is to continue to nurture their young family here on the prairies. Esther hails from Sioux Lookout Ontario where her mother Daisy is a Justice with the Ontario Provincial Government. Her dad Tom is a retired public school teacher who now works as a guidance counselor. Esther’s heritage is complex, stemming from her mother’s Ojicree ancestors and her dad’s Estonian forebears. Esther has had the benefit of a multilingual upbringing and intends to encourage her children to be conversant in several languages. I always enjoy their visits to the bakery when we can toss French phrases 72 · BAKING BUYER · JUNE 11
